Paradou Viognier by Famille Chaudiere - White

The brothers source their fruit for Le Paradou from vineyards in the IGP Méditérranée region of Southeast France. The grapes are picked early to retain as much natural acidity as possible, which is otherwise easily lost in such a warm region of the country. The wine is fermented in stainless steel at a low temperature with very little skin contact, and then malolactic fermentation is blocked. The result is a fresh, elegant wine that is extremely popular in the bar.
